When you think about Disney’s Coronado Springs Resort, chances are you probably don’t automatically assume you’d be able to find a ramen bar there… but right now, you can!
We had heard from Cast Members that a new ramen bar was coming to El Mercado del Coronado at this popular hotel, so of course, we had to go check it out for ourselves. Read our full review here!
There are two new ramen dishes available at El Mercado del Coronado, so of course, we had to try them both! The Beef Ramen is available for $18 and the Vegetable Ramen is your other option for $16.
You’ll find it set up right with the rest of the hot food at this counter-service restaurant and the ramen is made fresh right in front of your eyes.
We picked up a ramen spoon and some chopsticks and got ready for some serious ramen eating!
Kicking things off with the Beef Ramen, which is served with tender teriyaki beef over yakisoba noodles in a rich beef broth topped with a hard-boiled egg, edamame, shredded carrots, mushrooms, scallions, crispy garlic, and sesame seeds
We’re happy to say this was a hit! We thought that the noodles were more like a spaghetti consistency rather than a true yakisoba noodle, but the beef broth was pretty spot on to what we’ve had from other ramen restaurants. The edamame, the carrots, the hard-boiled egg, even the scallions and the garlic crisps aren’t too overpowering. It all just kind of works together, and they’ve really done a good job on this for their first go at it.
The beef was really well cooked and it’s got kind of a crispier outer edge to it as if it were seared, but it’s also tossed in teriyaki sauce which helps add some flavor. I really enjoyed it. The mushrooms do help add flavor to the beef broth a little bit, and it all works together to really enhance that flavor and make it feel a little bit more authentic.
The Vegetable Ramen is pretty much the same but without the beef and is made with yakisoba noodles in a flavorful vegetable broth, topped with a hard-boiled egg, edamame, shredded carrots, mushrooms, pickled ginger, cucumber slices, scallions, crispy garlic, sesame seeds, and nori.
The only real difference between the vegetable and beef ramen is that the vegetable doesn’t have any beef broth or beef, and comes with nori (seaweed) and a vegetable broth instead. As soon as this dish was served to us, we immediately could smell the nori so if you’re not a big fan of seaweed, you might want to skip this or ask for it without it. This one has more of a clear onion soup-type flavor to it like you might expect from a Japanese steakhouse.
The veggies were abundant and cooked really well without being mushy. There was a lot more to this dish than just noodles in a broth, and we can see it being a big hit with non-meat eaters!
We spoke with a Cast Member leader about the new dishes, and he advised us that there are a lot of international guests at the resort so they have watched countless families and convention goers bring in whole meals of Chinese food and ramen into the hotel. So, they thought they would try their own hand at it in an effort to cater to those tastes! He said they have plans to do other versions and flavors depending on how well this is received, so you may see these dishes (and more) sticking around for a while!
